I too am a natural born vegetarian - I refused meat as soon as I understood where it was from, aged 3, but sometimes we have to putaside our preferences and allow the importance of healing and our health to take precedence. I have been making various homemade stocks for many years and do realize the longer simmering time (9+ hours) produces a tastier stock. I've never tried cooking more than 12 hours, but will give 48 hours a try. Although filtered / spring water is best, if your water source is chlorinated just let it sit on your counter for 15-30 minutes to allow the gases to evaporate. Let simmer as low as possible without the flame going out for 48-72 hours the longer the more medicinal it will be. Pull the bones out when finished, strain into mason jars and save the marrow and the fat and eat them with your meals and cultured veggies, it will heal your lining twice as fast. When the jars cool off put them in thefridge, the marrow and broth will keep in the fridge for seven days and in the freezer for months. If you freeze some make sure you leave 2 inches of space from the top of the jars so they don't explode. I am drinking a 1-2 quarts a day by itself or with meals you can take your probiotics with it too. I am on a strict diet with no grains so the healing process can work much quicker and the good intestinal flora can flourish over the bad bacteria.
